Simply put these are the most decadent scone Henry makes. Serve'em warm while the white chocolate is still melted inside and watch the look on everyone's face. Ummmmm!

 

Scone Ingredients

  • 2½  cups all purpose flour                
  • 2 tbsp. sugar                                    
  • 2½ tsp. baking powder                      
  • ½ tsp baking soda                                
  • ½ tsp salt                                              
  • ½ cup cold butter, cubed                 
  • 1 cup buttermilk                                   
  • 1 egg                                                       
  • 1 cup dried cherries                              
  • 3 oz chopped white chocolate              

Topping

  • 2 oz melted white chocolate               

 

Directions

Preheat oven to 400F

Line baking sheet with parchment paper, set aside.

In large bowl, whisk together flour, sugar, baking powder, baking soda and salt. Using your hands, blend the butter until the mixture resembles coarse crumbs.

In small bowl, whisk buttermilk with egg, add to flour mixture. Sprinkle with cherries and white chocolate, stir mixture with fork to make soft dough.

With lightly floured hands press dough into ball. On floured surface, knead dough a few times but do not overknead.  Pat dough out to thickeness desired and cut with cutter ( I use a glass). 

Bake for approx 15 to 18 min. Transfer to rack and let cool. 

Drizzle with white chocolate and let stand approx 1 hour.

Makes from 12 to 15 scones depending on cutter size used.
